Vegetable sandwich is a vegetarian form of sandwich commonly eaten in India. It is the most popular type of sandwich eaten in India.( www.vizagfood.com )

The most commonly used vegetables are tomato, cucumber, onions and potato. Sandwiches may be toasted, grilled or plain. Almost all restaurants serve vegetable sandwiches. Grilled sandwiches are very popular among the urban youth. Sandwiches may have butter, cheese, sour cream and even mayonnaise, in which case it does not remain purely vegetarian. Variations in vegetable sandwiches galore and vary from vendor to vendor. 

To make a vegetable sandwich the vegetables such as cabbage, cucumbers, carrot, etc are cut into thin slices and placed between two slices of white bread, spread with butter, or cheese and green coriander chutney. It is then grilled in a sandwich toaster and served with tomato ketchup.




Brown bread sliced stuffed with cabbage, carrot and cheese. A hearty cold-weather pleaser, appropriate to keep you going on busy days with late lunches.


Ingredients


8 slices of whole wheat bread

For the stuffing3/4 cup shredded cabbage
3/4 cup grated carrots
3/4 cup grated low fat paneer (cottage  cheese)
2 tbsp chopped coriander (dhania)
1 green chilli, chopped
2 tbsp mozzarella cheese
salt to taste

Other ingredients
4 tsp low fat butter for cooking


Method

    For the stuffing


    1. Mix all the ingredients together. Divide the stuffing into 4 equal portions.

    How to proceed

    1. Place one portion of the stuffing on one slice of bread. Top with another slice of bread.
    2. Repeat with the remaining ingredients to make 3 more sandwiches.
    3. Pre-heat the griller and grill the sandwiches, using a little low fat butter to cook.
    4. Serve hot.
